Light Oat Bread

1 1/2 tsp yeast
3 c all purpose flour
1/2c oats
1 tsp salt
2Tbs honey
2Tbs brown sugar
2 Tbs margarine
1 1/4 c luke warm water
I make mine in the bread machine on Basic med crust(2lb) setting.

Fruit smoothie

1/2 c frozen blueberries
1/2 c frozen mangoes
1/4-1/2 c of pom-blueberry juice
1tsp ground flaxseed
1/2 fresh banana
blend until mixed and enjoy

Pumpkin Cheesecake Pudding

1 pkg white choc. cheesecake pudding
1/2 can of pumpkin
1 tsp pumpkin pie spice

Make pudding according to directions. Let set up in fridge. Then add pumpkin and spice.Mix well.

Inside out Cabbage Rolls

1 lb. lean ground beef
1 onion chopped
1 green pepper chopped
1 small head cabbage chopped
1can (10oz) diced tomatoes( with or without green chilies)
1c reduced sodium beef broth
1 can pizza sauce
1 c cooked brown rice
1/2 c shredded reduced fat cheddar cheese
In dutch oven cook beef, onion, pepper until meat is no longer pink. Stir incabbage, tomatoes,broth and sauce. Bring to a boil. Then reduce heat to med-low and cover. Cook 25 mins. or until cabbage is tender.Stir occasionally. Stir in rice heat through. Remove from heat. Sprinkle cheese ;cover and let stand until cheese is melted.

1 1/3 c=serving makes 6 servings
calories 244 fat 8 g carb 23 g fiber 5g protein 21g

Pumpkin yogurt

1 container Stoneyfield Pumpkin Pie yogurt
4 crushed Ginger Snaps

Citrus Grilled Turkey Cutlets

2 Tbs. each of lime,lemon,orange juice
1 Tbs. minced cilantro
1 Tbs.canola oil
1 Tbs. honey
1 small garlic clove minced
1/2 tsp. salt
1/2 tsp. chili powder
1/4 tsp. cumin
1/4tsp pepper
1 pkg. turkey breast cutlets

In a large resealable plastic bag combine all but turkey. Then add turkey.Seal bag and turn to coat. Refrigerate for 2 hrs.
Coat grill or pan with cooking spray. Drain and discard marinade. Cook until turkey is no longer pink inside.

I like to add to a salad or have with a side of couscous.

BTW- E and K loved it.

Frozen Hot Chocolate

2/3 c. hot water
1 envelope sugar free hot chocolate mix
2 Tbs. whip cream

Dissolve mix in water. Freeze 4-5 hours. Let stand at room temp. 15 mins.
Enjoy!!
